Our Story
Ultramarinos Marín was born in Barcelona with a simple idea: to bring back the timeless neighborhood bar and prove that true luxury lies in exceptional ingredients, craftsmanship, and genuine hospitality. In September 2026, that same philosophy arrives in Madrid, preserving the spirit of the original house: a lively bar, a grill that never stops, an honest menu, and a kitchen where technique is always in service of the ingredient—not the other way around.
Here you’ll find market-fresh produce, seafood sourced from some of Spain’s finest fishing ports, house-made cured meats and sausages, wines from small, low-intervention producers, perfectly poured beers, and a seasonal selection of preserves, escabeches, and other in-house preparations. The cooking is straightforward and unpretentious, allowing every ingredient to speak for itself.
Leading the kitchen is chef Borja Ordoño, whose career has taken him through some of the world’s most celebrated restaurants, including Etxebarri, Alain Ducasse, and Noma. After years of learning from the very best, he returned to Barcelona to create a restaurant that celebrates tradition through a contemporary lens: cooking with absolute respect for the product, making everything possible from scratch, and letting honest flavors take center stage.
Ultramarinos Marín Madrid is, above all, a place to eat exceptionally well, drink even better, and stay longer than you planned. A place where the grill is the heart of the house and every service is a celebration of honest cooking—food that doesn’t need to impress because it speaks for itself.

On the corner of Manuela Malasaña and San Andrés, in the heart of Madrid’s Malasaña neighborhood, stands a venue with more than fifty years of history. Opened in 1975, it began its life as a traditional tapas and wine bar, later becoming La Templá before spending decades as Casa Maravillas—one of those beloved bars that has become part of the neighborhood’s collective memory and Madrid’s tapas culture. We have preserved its original hydraulic tile floors, its iconic wood-and-marble bar, and the timeless castizo character that has welcomed generations of locals and visitors alike.
